Lemon Meringue Fudge

I love anything lemony and so when I found this recipe on Pinterest I couldn’t wait to try it.

Lemon Meringue Fudge

 

The recipe is incredibly simple and the whole thing took a matter of minutes to make. To top it all off it tasted absolutely amazing! The lemon and white chocolate flavour fudge goes perfectly with the meringue crumbs sprinkled on top.

Recipe:

Ingredients:

500g white chocolate
1 tin condensed milk
1/2 teaspoon lemon extract oil
Yellow food colouring
1 cup broken meringue pieces

Method:

  1. Add the lemon extract oil and colouring to the condensed milk.
  2. Place the chocolate and the condensed milk in microwaveable container.
  3. Heat on low in 30 second intervals until nearly all the chocolate has melted.
  4. Stir until the mixture is smooth.
  5. Stir through the meringue pieces and pour into a lined tray.
  6. Sprinkle a few meringue crumbs on top, pressing them in so they stick.
  7. Refrigerate overnight.
  8. Once set, remove from the tin and slice.

    Do you need a thermometer? Did you make or buy the meringue? Was it very sweet or does the lemon balance it out? I’m not a lover of white chocolate I think Paul would love this but I don’t know whether he would be keen on lemon flavour…. What else do you think would work?

    • Hey,

      You don’t need a themometer – just keep heating it in bursts until it’s all melted. If you hear it too much the chocolate will go funny. It’s very sweet because it’s lemon essence not lemon juice but I guess you could probably add some lemon rind and that would change the flavour (I’m not sure if lemon juice would work – it might curdle the mixture) You could probably make vanilla or mint just as easily. I’ve seem orange essence and almond too. I’m sure all of them would work. Possibly some sort of fruit purée like strawberry or cherry would work too but I’m just guessing! Xx
